I skin them so the seasonings gets into the meat. With the skin on I've found that you lose the seasonings when you peel the skin off and then its just bland meat. I usually eat them cool with sliced pieces with cheese and crackers or mix it in cream cheese to make a smoke trout spread for Bagels or they're just good as-is.Never seen them cooked like that before. You skin them, grill them, then put the cheese on them?
